This is a hangover from my pupil days; the healthful, filling snack to which I’d deal with myself on these uncommon events after I’d been diligent sufficient to go to the health club. The recipe caught round lengthy after the gym-going fell by the wayside, and it’s now my lunchtime deal with if I ever have a random break day to myself through the week. Greatest loved with a facet serving to of trashy daytime telly.
Tuna soften, my approach

1 tsp olive oil
2-3 spring onions, trimmed and thinly sliced (50g)
1 x 145g tin tuna in brine, drained
50g mature cheddar, grated
1 thick slice of sourdough, flippantly toasted
1-2 tbsp crisp fried onions (shop-bought or home made)
Heat the oil in a small frying pan on a medium-high warmth, then add the spring onions and fry, stirring, for 2 to 3 minutes, till properly softened. Stir within the tuna, flip up the warmth to excessive and fry for 30 seconds. Scatter within the cheese, stir to mix till it melts, then tip the lot over the toasted sourdough, prime with crisp onions and tuck in.
